A delicious French Onion Pasta made with high protein ingredients, cooked in a slow cooker. This recipe includes chicken thighs, caramelized onions, and a rich cheese sauce combined with rigatoni pasta.
Cook the chicken thighs in the slow cooker with Worcestershire sauce, minced garlic, Dijon mustard, salt, garlic powder, onion powder, black pepper, thyme, and beef bone broth on low for about 4-5 hours.
In a separate pan, caramelize the onions in butter until golden brown, then add beef bone broth, Worcestershire sauce, soy sauce, and Dijon mustard to make the 'French Onion' base.
Combine the caramelized onion mix with the chicken in the slow cooker.
In a bowl, mix cottage cheese, Gruyère, parmigiano reggiano, milk, and the remaining caramelized onions.
Cook the rigatoni until 50% done, then add it to the slow cooker with about 1 cup of pasta water.
Stir well and continue cooking until the pasta is fully cooked and the sauce has thickened.
Garnish with chopped chives and the remaining caramelized onions before serving.
